Easy roast chicken seasoned with butter chicken curry. This curry is mild and can be enjoyed by the whole family.
Two Chicken thighs
1 Red onion
1 Courgette
1 Wedge of lemon
1 Bag curry butter chicken
3 Tbsp Oil
Pinch of salt
Cooking time 60 minutes
Preheat oven to 220°C
1. Put the chicken thighs in tray, sprinkle with salt, pour over with curry butter chicken. Refrigerate for 30 minutes.
2. Cut red onion into wedges and courgette 1.5cm wide slices.
3. Cover an oven tray with baking paper. Take chicken out of the refrigerator, remove excess curry sauce for the next step. Place marinated chicken, onion and courgette into the tray.
4. Bake for 20 minutes in preheated oven at 220C. Then add leftover curry and lemon on top of the chicken and bake for another 10 minutes.
